Grouper Carpaccio
•Ingredients:
- 1 pack of our grouper carpaccio (4,23oz).
- 1/4 small yellow heirloom tomato, diced small.
- 1/4 small red heirloom tomato, diced small.
- 1/4 small red onion, chopped small.
- 1/4 small jalapeño, chopped small.
- 1/2 garlic clove, minced.
- 1/4 cup cilantro, chopped.
- Juice of 1 lime.
- Zest of 1/2 lime.
- Olive oil, to drizzle.
- Fleur de sel.
- Freshly ground black pepper.
•Instructions:
- Arrange the tuna carpaccio on a serving dish and refrigerate, covered, until ready to assemble.
- In a medium bowl, mix together the tomatoe, red onion, jalapeño, garlic, cilantro, lime zest, and lime juice.
- Remove the carpaccio platter from the refrigerator.
- Spread the tomato mixture on top of the fish.
- Sprinkle on fleur de sel and black pepper to taste.
- Generously drizzle on some olive oil.
- Serve immediately.
