Grouper Carpaccio

•Ingredients:

  • 1 pack of our grouper carpaccio (4,23oz).
  • 1/4 small yellow heirloom tomato, diced small.
  • 1/4 small red heirloom tomato, diced small.
  • 1/4 small red onion, chopped small.
  • 1/4 small jalapeño, chopped small.
  • 1/2 garlic clove, minced.
  • 1/4 cup cilantro, chopped.
  • Juice of 1 lime.
  • Zest of 1/2 lime.
  • Olive oil, to drizzle.
  • Fleur de sel.
  • Freshly ground black pepper.

•Instructions:

  1. Arrange the tuna carpaccio on a serving dish and refrigerate, covered, until ready to assemble.
  2. In a medium bowl, mix together the tomatoe, red onion, jalapeño, garlic, cilantro, lime zest, and lime juice.
  3. Remove the carpaccio platter from the refrigerator.
  4. Spread the tomato mixture on top of the fish.
  5. Sprinkle on fleur de sel and black pepper to taste.
  6. Generously drizzle on some olive oil.
  7. Serve immediately.
